Spiced Meringue: - 1.5 Parts Spiced Syrup - 1 Part Fresh Egg White - 2 iSi Cream Charger
How to Make
Garnish: Mint Sprig, Berries, Caramelised Spiced Meringue Foam Glassware: Julep or Tankard Method: Muddle berries with lemon juice, gin and spiced syrup. Shake and then dirty strain over crushed ice into glassware. Syphon meringue foam over top and caramelise with blow torch. Add the garnish.
Spiced Syrup
Method: Simmer all ingredients together for 20 minutes, then strain.
Spiced Meringue Foam
Method: Add syrup and egg white in the syphon. Close and shake. Charge and shake it well.
